Tasting Note: Pure, sparkling English wine with a delicate perfume of hedgerow flowers, a flavour of green apples and a fine, rich toastiness on the finish.
Food Matching: This is the perfect aperitif or celebration drink, it is the flawless accompaniment to any party, enjoyed with any canapé.
Vineyard: The grapes were hand harvested with the ultimate in care from the Hampshire vineyards.
Vinification: The hand harvested grapes were whole bunch
pressed to extract top quality juice. 15% of the total blend was barrel fermented in old white Burgundy barrels & partial malolactic fermentation took place in order to soften the wine’s natural acidity. To ensure the consistency and continuity of our signature style, 37% of reserve wines (that had naturally softened and developed over time in oak barrels & stainless steel tanks) were added to the blend before secondary fermentation. After 4 years ageing on lees in bottle to add roundness
and character, the wine was disgorged with a light dosage of 3 g/L.
Awards and Press News: Subtle and complex, this wine has nuts, citrus, flint, green apples and blossom on the nose. Complex, with a core of fruit supplemented by savoury bread flavours. Green apples, quince, honey, lemons, pear skins mingle with nuts, spice and a touch of flint. Assertive mousse and a bold green apple and honeysuckle finish. 96/100 Decanter World Wine Awards 2022
