Vinification: Grapes were harvested with 21° Brix in March with a vineyard yield of 20 tonnes per hectare average. Afterwards the grapes are pressed and the clean must goes to stainless steel tanks where is inoculated with selected yeasts. Fermentation is carried out for 10 to 12 days with controlled temperatures under 14°C. This preserves and develops the aromas and fresh character of the grape, as well as the fruit intensity.
